Once in a while I’ll post a picture of something I’ve made and get a lot of requests for the recipe. I’m going to try to post them under this tab so they are more accessible to everyone. First one up:

Easter Breakfast Casserole (from allrecipes.com) – which I didn’t make on Easter 

Ingredients (the way I made it, not the original recipe)

1 lb. bulk med spicy sausage                           8 eggs

½ cup diced onion                                          2 cups milk

3 cups shredded cheese                                  1 (16 oz) pkg frozen hash brown potatoes, thawed

(I used combo of sharp chedder & Monterey Jack cheese)

Salt and pepper to taste

Directions:

Preheat oven to 350 degrees (I waited until I actually baked the casserole to pre-heat oven.)

Lightly grease a 9×13 inch casserole dish.

Fry sausage with onion in a large skillet over medium-high heat until evenly browned.

In a large (and I mean large) bowl, beat together eggs and milk. Mix in cheese and drained sausage & onion mixture. Stir in the thawed hash browns. Pour mixture into prepared casserole.

(I made the casserole the night before I needed it, so I covered it with aluminum foil and put in the fridge overnight, but you could just bake it at this point).

Bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes unti legs have set.

This was the first time I made this so I’d tweak it a bit next time. Since I made this for a potluck I didn’t spice it up much but in the future I’d use a spicy sausage and add cayenne pepper and red pepper flakes in the eggs. The original recipe called for a ¼ cup diced green peppers, which my husband doesn’t like so I skipped them. I may add diced red bell pepper next time for a prettier presentation (and flavor too). Also, use the hash brown shreds instead of hash brown cubes, as I did. Less big potato taste, more subtle throughout the dish.

Enjoy! It tasted great, got some nice feedback and I didn’t have leftovers.
